They suggest looking for flavor notes of butterscotch, brown sugar, and white pepper (the latter, no doubt, from the rye grain). The name stems from the Calumet Farm of Lexington Kentucky which, under the guidance and ownership of William Monroe Wright, won 8 Kentucky Derbies and 2 triple crowns. |
